HOT 'N SWEET SALMON

What you need :)

  • 4 Alaska salmon steaks or fillets (4 to 6 ounces each), thawed if necessary
  • 1 lime, halved
  • 1-1/2 tablespoons chili powder
  • 1 tablespoon brown sugar, not packed
  • 1/2 teaspoon salt
  • 1/2 teaspoon paprika
  • 1/4 teaspoon cumin seed
  • 1/4 teaspoon oregano
  • 1/4 teaspoon cayenne pepper
  • Olive oil or nonstick cooking spray

How to prepare :)
Pat salmon steaks/fillets dry with paper towel. Squeeze lime juice over cut sides (not skin) of each steak/fillet.

In small bowl, blend together chili powder, brown sugar, salt, paprika, cumin, oregano and pepper. Pat spice mixture onto cut sides of each steak/fillet; let fish rest 5 minutes before cooking.

Heat grill or broiler/oven to medium-high. Brush grill surface with oil or coat broiler pan with cooking spray. Grill or broil salmon, rub side down, 5 inches from heat source for 4 minutes. Watch closely to prevent over- browning. Turn salmon over carefully, and continue cooking an additional 4 to 5 minutes or until just done.
