Fried Egg With Smoked Salmon

Ingredients :)
4 slices smoked salmon
8 eggs
1 tablespoon butter

Instructions :)
Put the butter in frying pan.
Place the slices of smoked salmon in the frying pan.
Break the eggs on top of the salmon and let cook very slowly until the whites are set.

Fettuccine Primavera

what you need :)

  • 1 package (9 ounces) Buitoni Refrigerated Fettuccine, cooked, drained, kept warm
  • 3/4 cup water
  • 1 cup broccoli florets
  • 1/2 cup sliced carrots
  • 1/2 cup red pepper strips
  • 3 tablespoons butter or margarine
  • 2 tablespoons all-purpose flour
  • 1 cup Nestlé Carnation Evaporated Milk
  • 1/2 cup chicken broth
  • 1/2 cup (4 ounces) shredded Parmesan cheese
  • 1/2 cup grated provolone cheese
  • 1/8 teaspoon cayenne pepper
  • Fresh ground black pepper to taste

How to prepare :)


HEAT water in medium saucepan to boiling. Add broccoli, carrots and red pepper. Reduce heat to simmer; cook 5 to 7 minutes. Drain; set aside.

MELT butter in same saucepan over medium heat; stir in flour. Gradually add evaporated milk and chicken broth. Cook, stirring constantly, until mixture comes to a boil and thickens. Stir in Parmesan cheese, provolone cheese, cayenne and black pepper until cheese is melted. Toss with fettuccine. Add vegetables; stir to coat. Serve immediately.

4 servings

Variations
NOTE:

May substitute 1 pound frozen vegetables, cooked according to package directions, for fresh vegetables.

May substitute one half pound dry fettuccine, cooked according to package directions, for refrigerated pasta.

May add 1 cup cooked, diced chicken or shrimp.

Chicken Avocado Melt

What you need :)

2 Chicken breast halves
1 tb Cornstarch
1/2 ts Cumin, ground
1/2 ts Garlic salt
1/2 Egg; lightly beaten
1/2 tb Water
3 tb Cornmeal
1 1/2 tb Oil
1/2 Avocado; peeled, sliced
3/4 c Cheese, monterey jack;-shredded
1/4 c Sour cream; divided
1/8 c Onion, green, tops only
1/8 Pepper, red bell; chopped
Tomatoes, cherry
Parsley sprigs

How to prepare :)

Skin and bone chicken breasts. On hard surface, with meat mallet or similar flattening utensil, pound chicken to 1/4 in thickness.

In shallow dish, mix together cornstarch, cumin and garlic salt.
Add chicken on piece at a time, dredging to coat.

In a small bowl, mix egg and water.
Place cornmeal in another bowl.
Dip chicken, first in egg and then in cornmeal turning to coat.

In large frying pan, place oil and heat to medium temp.; add chicken and cook 2 minutes on each side. Remove chicken to shallow baking pan; place avocado slices over chicken and sprinkle with cheese.
Bake in 350øF oven about 15 minutes or until fork can be inserted in chicken with ease and cheese melts. Top chicken with sour cream, dividing equally; sprinkle with chopped green onion and red pepper.

Thai Fried Rice

How to cook Thai Jasmine Rice:
Take 1 cup of Thai jasmine rice and place in a medium pot. Rinse the rice with cold water and drain water at least three times to remove any debris. Add water to the sauce pan until the water levels 1 centimeter above the rice or 1 1/2 cups of water. Place a lid on the pot. Set the stove element to medium heat and place the pot on the element. After 20 minutes, turn the element off and let the rice rest for 10 more minutes.

Recipe for Thai Fried Rice:
2 cups Thai jasmine rice cooked
1 egg
2 tablespoons oil
3 cloves garlic chopped
� cup of frozen peas and carrots thawed
2 tablespoons oyster sauce
3 tablespoons soy sauce
1 sprig of Thai basil chopped
1 sprig for green onion chopped


Instructions on making fried egg strips: In a small bowl, crack an egg and 1 tablespoon of soy sauce mix using a fork. Set the stove element to high heat and place a wok on top. Add 1 tablespoon each of oil and garlic into the wok. Add the egg and swirl the egg around the wok. Fold the fried egg in half and lip the egg again to cook the other side. Place the fried egg on to a cutting board. Once the fried egg is cooled, slice the egg finely and thinly to create long strips.

Instructions on making Thai Jasmine Fried Rice: Set the stove element to high heat and place a wok on top. Add 1 tablespoon each of oil and garlic into the wok. Add the thawed vegetables and mix for 1 minute. Add the cooked jasmine rice. Add 2 tablespoons each of oyster sauce and soy sauce. Mix to incorporate all ingredients and break any rice clumps. Once the rice is broken, add chopped Thai basil and green onions. Place the fried jasmine rice into a serving bowl and top with the fried egg strips.

1 Medium Sized Mixing Bowl
1 Small Mixing Bowl
1 Knife
1 Fork
1 Dessertspoon
1 Baking Tray
1 Flour Sieve
1 Pinch Of Salt
½ lb of Self-Rasing Flour
3 Ounces Of Butter
3 Ounces Of Sugar
4 Ounces Of Sultanas (or Currants)
2 Tablespoons Of Milk
1 Egg

How To Make:)

Start by lightly greasing your baking tray and then put it aside (out of the way) until you need it.

Sift the flour and the salt together into your medium mixing bowl. Rub in the butter until the mixture starts looking like breadcrumbs. Then add in the sugar and sultanas and mix it all together with your knife.

With your fork lightly beat your egg and milk together in the small mixing bowl and then add them to your flour and sultana mixture. Stir it all together with your knife until you have a dough.

With your dessertspoon grab spoonfuls of the mixture and put them on your greased baking tray. You don’t need to make perfect round shapes. When you put them on the tray remember that they will get bigger while they are cooking so spread them about 1 to 2 inches apart.

After you’ve done that carefully put them in a moderate oven for about 10 to 15 minutes. When done carefully take the tray out and allow them to cool before eating them.

Honey Chicken Wings

What you need :)

2 lb Chicken wings

Freshly ground pepper

1 c Honey
1/2 c Soy sauce
2 tbs Vegetable oil

2 tbs Ketchup
1 Garlic clove, crushed


How to prepare :)

1. Preheat oven to 350o. Season chicken liberally w/ pepper. Place

wings in a large baking dish.

2. In a small bowl, mix together honey, soy sauce, oil, ketchup &
garlic until well blended. Pour over chicken. Bake for 45 minutes,
until chicken is well done & sauce is thick.

HOT 'N SWEET SALMON

What you need :)

  • 4 Alaska salmon steaks or fillets (4 to 6 ounces each), thawed if necessary
  • 1 lime, halved
  • 1-1/2 tablespoons chili powder
  • 1 tablespoon brown sugar, not packed
  • 1/2 teaspoon salt
  • 1/2 teaspoon paprika
  • 1/4 teaspoon cumin seed
  • 1/4 teaspoon oregano
  • 1/4 teaspoon cayenne pepper
  • Olive oil or nonstick cooking spray

How to prepare :)
Pat salmon steaks/fillets dry with paper towel. Squeeze lime juice over cut sides (not skin) of each steak/fillet.

In small bowl, blend together chili powder, brown sugar, salt, paprika, cumin, oregano and pepper. Pat spice mixture onto cut sides of each steak/fillet; let fish rest 5 minutes before cooking.

Heat grill or broiler/oven to medium-high. Brush grill surface with oil or coat broiler pan with cooking spray. Grill or broil salmon, rub side down, 5 inches from heat source for 4 minutes. Watch closely to prevent over- browning. Turn salmon over carefully, and continue cooking an additional 4 to 5 minutes or until just done.

Sheperd Pie

what you need :)

1 1/2 lbs ground round beef
1 onion chopped
1-2 cups vegetables - chopped carrots, corn, peas
1 1/2 - 2 lbs potatoes (3 big ones)
8 tablespoons butter (1 stick)
1/2 cup beef broth
1 teaspoon Worcestershire sauce
Salt, pepper, other seasonings of choice

how to prepare :)

1 Peel and quarter potatoes, boil in salted water until tender (about 20 minutes).

2 While the potatoes are cooking, melt 4 Tablespoons butter (1/2 a stick) in large frying pan.

3 Sauté onions in butter until tender over medium heat (10 mins). If you are adding vegetables, add them according to cooking time. Put any carrots in with the onions. Add corn or peas either at the end of the cooking of the onions, or after the meat has initially cooked.

4 Add ground beef and sauté until no longer pink. Add salt and pepper. Add worcesterchire sauce. Add half a cup of beef broth and cook, uncovered, over low heat for 10 minutes, adding more beef broth as necessary to keep moist.

5 Mash potatoes in bowl with remainder of butter, season to taste.

6 Place beef and onions in baking dish. Distribute mashed potatoes on top. Rough up with a fork so that there are peaks that will brown nicely. You can use the fork to make some designs in the potatoes as well.

7 Cook in 400 degree oven until bubbling and brown (about 30 minutes). Broil for last few minutes if necessary to brown.

Lasagna

What you need :)
  • 1/3 cup olive oil
  • 4 onions, minced
  • 6 (16 ounce) cans crushed tomatoes
  • 8 cloves garlic, minced
  • 12 ounces tomato paste
  • salt and pepper to taste
  • 10 leaves fresh basil leaves, torn
  • 2 (16 ounce) packages lasagna noodles
  • 1 cup red wine
  • 4 pounds ricotta cheese
  • 1 pound mozzarella cheese, shredded
  • 2 cups grated Parmesan cheese

How to prepare :)
  1. In a large heavy bottomed pot, heat the olive oil over medium high heat. Saute the onions and garlic until soft and slightly clear. Pour in the crushed tomatoes and bring to a boil. Stir in the tomato paste, salt and pepper. Lower heat to medium, just hot enough to keep lightly bubbling. Add basil leaves and cook, stirring occasionally for an hour. Add salt and pepper and red wine and allow to simmer another hour or until desired consistency. Remove from heat and let it cool. If you have time, let it sit in the refrigerator over night.
  2. Bring a large pot of lightly salted water to a boil. Add pasta and cook for 10 to 15 minutes or until al dente; drain and allow to cool.
  3. Preheat oven to 350 degrees F (175 degrees C).
  4. You'll need two 9x13 inch baking trays. Put a layer of sauce in the bottom of the tray, then a layer of slightly overlapping lasagna noodles. Spread a layer of ricotta over the noodles and a light sprinkling of mozzarella. Repeat until you fill the tray, making sure that you end up with lasagna noodles on top. Spread a layer of sauce over the noodles and sprinkle with mozzarella and parmesan. Cover with foil.
  5. Bake in a preheated oven for an hour. Remove the foil and bake another half hour.

FRIED MUSHROOM

What you need :)


1/2 cup flour
1/2 tsp. salt
1/4 tsp. dry mustard
1/4 tsp. paprika
dash pepper
1/2 cup buttermilk
8oz. mushrooms
oil for frying

How to prepare :)

Combine flour, salt. pepper, mustard and paprika. Dip the mushrooms
in the buttermilk then the flour mix. Heat oil in a skillet and fry the
mushrooms for 3 minutes or until browned.

BITTERBALLEN (Meatball Hors d'oeuvre)

what you need :)

4 tbl. butter or margarine
1/2 lb ground beef or veal
1/4 cup carrot, finely diced
1/2 cup onion, finely chopped
salt and freshly ground black pepper to taste
A grating of fresh nutmeg
1 tbl. fresh lemon juice
2 tbl. parsley, finely chopped
5 tbl. flour
1 cup beef broth or milk
1/2 cup dry bread crumbs
1 egg, beaten with 1 tsp. water
Oil for deep frying

How to prepare :)

Heat one tablespoon of the butter in a large skillet over moderate
heat and cook the meat, carrots, and onions until the meat is browned
and the carrots are tender. Drain the meat in a colander, then place
in a mixing bowl. Add the salt, pepper, nutmeg, lemon juice, and
parsley and stir to combine. Set the meat mixture aside. Heat the
remaining 3 tablespoons of butter in a saucepan over moderate
heat and stir in the flour to make a roux. Cook this for 2 to 3
minutes, then add the beef broth or milk. Continue heating, stirring
constantly, until the sauce boils and becomes quite thick. Combine
the sauce with the meat mixture, stirring to combine them thoroughly,
and chill this mixture for at least two hours in the refrigerator,
until it has become solid. When the mixture has solidified, roll it
into balls about 1 inches in diameter, using your hands. Roll the
balls in the bread crumbs, then in the egg and water mixture,
then in the bread crumbs again. Fry a few at a time in a deep fryer
with at least 2 inches of oil at 375 degrees until golden (about
2 to 3 minutes). Drain on paper towels and serve immediately.

MUSHROOM SOUP

What you need :)

1 lb. mushrooms
1 onion, diced
2 tomatoes, diced
1 tsp. of olive oil
3 limbs of epazote
1 quart of water
2 tsp. of chicken stock

How to prepare :)

Cut the mushrooms in half. In a soup pan add olive oil and onion, sauté until
soft. Add the tomatoes, mushrooms, chicken stock and the epazote stir for
2 minutes and then add the water. Let it heat for about 15 min.
